TASTING NOTES

Pedrotti Spumanti is a historic brand dating back to 1901, focused on the production of Metodo Classico Trento DOC sparkling wine. The winery is located in Nomi, a small municipality south-east of Trento, close to the Adige river. It is run by Chiara and Donatella, who carry on a distant dream of their father. It was Paolo who was inspired to use a cave from the First World War as a place for wines to rest on the lees and undergo the ageing process. In 1982, Luigi Veronelli, master of Italian oenology, christened that cave the ‘Cattedrale dello Spumante’ (Cathedral of Sparkling Wine), and it continues to be called this today. Pedrotti's Trento DOC Brut Rosé Millesimato is a Trentino sparkling wine made from 70% Chardonnay and 30% Pinot Noir. Once the base for the sparkling wine has been prepared, the grapes spend between 45 and 48 months on yeasts before disgorgement. The glass is a delicate soft pink, with a fine, persistent perlage. On the nose, we immediately notice small (red) berry fruit, which, mixed with the notes of ageing on yeasts, are very reminiscent of pastry, accompanied by fruit notes and jam. On the palate, it is elegant and persistent. Roundness balanced by the liveliness of mineral notes. Since its foundation, the Pelissero family has set as its goal the cultivation of grapes indigenous to Piedmont, in order to create and bottle authentic Piedmontese wines that best express the territory and its unique characteristics. A delicate and complex work, the result of much study and a boundless passion for viticulture, which has succeeded in making the family's wine cellar of the same name one of the most appreciated and interesting wineries in the region in a short time. Local traditions and history can still be felt at every stage of production. Everything starts from the cultivation of the 38 hectares owned by the winery, through pruning and bottling to storage and distribution. A slow and steady process, the result of the family's commitment to preserving the secrets of local viticulture and, at the same time, combining them with the most modern techniques for state-of-the-art processing. Among the best known productions are certainly those of Barbera, Nebbiolo and Dolcetto, which are popular and much loved.
