Production

Sassoalloro is the forerunner of a new interpretation of Sangiovese in its purest form: a wine that is ready to drink immediately, yet retains the characteristics of the great Tuscan wines. The name Sassoalloro derives from a massive volcanic boulder of exceptional size, around which various legends have grown over the centuries. This red wine is the result of Jacopo Biondi Santi’s innovative vision, which bridges the past and the future with a wine created through a new interpretation of Sangiovese. To produce Sassoalloro, a careful selection of Sangiovese Grosso di Toscana grapes is carried out. Particular attention is paid to fermentation and ageing in barriques. This wine embodies all the hallmarks of the Biondi Santi Winery, both in terms of quality and variety of products, yet at the same time, it represents a departure from the traditional rules of extended ageing. After vinification, the wine rests in untoasted oak barriques from the Tronçais forests for 14 months. These techniques give the Sangiovese Grosso di Montalcino all its merit but with characteristics different from those of the past, which are more in tune with current market demands.

Organoleptic Characteristics

In the glass, it presents a brilliant red colour with purple hues. The nose, refined and intense, comes alive with fresh, fruity aromas, with hints of violet in the background. The palate is soft and velvety, striking a perfect balance between just the right acidity and subtle tannins, leading to a long, elegant finish.

Occasion and Pairing

A bottle to uncork for Sunday lunch, paired with red meat dishes, preferably more elaborate ones.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 16–18°C.

Jacopo Biondi Santi

Jacques Selosse is a myth of french bubbles, an absolute reference point for the french wine area of Champagne. Jacques and his son Anselme began in 1974 to make their own grapes, giving an important qualitative breakthrough and becoming a point of reference for the small independent vignerons of Champagne. Since 1980, Anselme and his wife Corine have been leading the production, starting a project to exploit every single parcel he owns. Today Selosse covers 7 hectares of vineyards, including the Grand Cru of Chardonnay in the municipalities of Avize, Cramant, Oger and the Grand Cru of Pinot Noir in Ay and Ambonnay. The vineyards are cultivated in a natural and environmentally friendly way, without the use of synthetic chemicals, with very low pruning and reduced yields. In the cellar the fermentation takes place with only indigenous yeasts and the liquer d'expedition consists of only pure fructose of grapes. Each processing is carried out strictly manually, with batonnage, remuage and degorgement. Selosse Champagnes are complex and refined, the result of a production philosophy focused on respect for nature and the enhancement of terroir. A unique style and great personality.
