TASTING NOTES

Casamatta Bianco, wine of the Argentario, speaks of international vines and old vineyards. A fresh, crisp and salty wine that brings with it the sea breeze. Made from 60% Vermentino, 30% Trebbiano and 10% Ansonica grapes, it is a wine that reflects the terroir of the area, the sun and the scents of Maremma. The grapes are harvested between Argentario and Capalbio, and after manual harvesting are selected in the vineyard and in the sorting table in the cellar. They undergo a first soft pressing with dry ice and then ferment in steel vats. Fermentation lasts about 15 days and is conducted at very low temperatures to maintain the freshness and varietal characteristics of the grapes. Once the wine is blended, it is aged for three months in steel tanks and then bottled. Floral notes, peach flowers, citrus scents and freshness of Vermentino are revealed on the nose. Pear and exotic fruit, full and balanced body derived from Trebbiano and Ansonica, are perceived on the palate at the time of tasting. Full and soft wine that is perfect as a fresh aperitif, or in combination with delicate Italian cuisine. THE WINERY

Bibi Graetz

Born into a family of artists, after his studies at the Academy of Fine Arts in Florence, Bibi Graetz took over the family vineyards around the castle of Vincigliata in the hills of Florence in 2000 and from a few barriques of Sangiovese, Colorino and Canaiolo his most iconic wines were born: Testamatta and Colore. The artist's background is clearly evident in the bottles where the labels are pictures painted by Bibi. Vineyards well over 50 years old and at altitude, the choice of indigenous vines and a natural approach in the winery are the founding elements of Bibi's vision of organic and sustainable viticulture. In 2019, Bibi Graetz's winery moved to the central square of Fiesole, inside Villa Aurora, a splendid early 19th-century hotel on the hill overlooking Florence and converted into a winery to house Testamatta and Colore, as well as Bibi and his family.
