TASTING NOTES

Production

Giùen Rosso di Valtellina is made from 100% Nebbiolo (Chiavennasca) grapes, grown in vineyards within the Valtellina DOC area, situated in the foothills of the Valtellina Alps on sandy loam soil that is shallow and of low fertility. Once the grapes arrive at the winery, they are destemmed but not crushed, and gently transferred to fermentation tanks. The must obtained during these stages is then fermented. The carbon dioxide produced immediately saturates the container, triggering natural enzymatic fermentation within the whole berries. This process gives rise to very intense fruity aromas. During racking, which takes place after about a week, the whole grapes release their aromatic and sugar-rich contents. Fermentation concludes slowly at a low temperature without further contact with the skins. The wine is aged for at least six months in the cellar, partly in wood and partly in steel. Organoleptic Characteristics

In the glass, it presents a ruby red colour, with an intense, vinous, fruity bouquet and a delicate fragrance of small wild berries and cherries. Sweet spices with delicate notes of violet; on the palate, it reveals a smooth flavour with savoury tannins, a fruity aftertaste and a long, savoury, mineral finish.

Ideal with starters, first courses and mild meats.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 16–18°C.

THE WINERY

Nino Negri

Of all the wine cellars in Lombardy, perhaps Nino Negri's is one of those that has succeeded best in combining traditional techniques with the most complex and avant-garde innovations. Between French and American oak barriques, the oldest traditions of the Valtellina region, where the winery and its vineyards have been in operation for more than a century, still find their place. After careful renovation work aimed at striking a balance between old and new, the company has created a production of high-quality grappas and Lombardy wines with a strong character and rich history. Its territory lies on the slopes of the Valtellina mountains, in an area sheltered from the north wind and exposed to the sun. The area's microclimate is exploited to the full during cultivation, in order to be able to count on excellent grapes that give the final product a class and finesse that is typical of Lombardy.
