Production

Recioto della Valpolicella is the sweet Venetian wine par excellence, certainly one of the most famous sweet wines in Italy. Produced with passitE grapes, the same grapes that are used to produce Amarone, autochthonous grapes of Valpolicella classic selecting only the "recie" of the cluster, ie the upper part, the most sweet and delicious, from which it derives its name. From the hills of Negrar, from a volcanic-calcareous soil at 300 meters above sea level come the grapes used to produce this Recioto della Valpolicella Classico DOCG, among which we recognize the Corvina, the Rondinella and the Molinara. The bunches are selected manually and are brought naturally to overripening for about 130 days in a fruit-grower, with temperature, humidity and loss of weight constantly monitored. The crushing and destemming of the grapes takes place at the end of December, followed by spontaneous cold maceration for about ten days, inoculation of yeasts and slow fermentation with continuous remixing. After about 30 days, a part of the wine is destemmed and the remaining grapes are taken on this must/wine, almost dry, to reach the natural sweet and multiply the aromas. A few months in steel and then aging in bottle. Nutritional values: E = 540 KJ/129 Kcal per 100 ml

Organoleptic Characteristics

A beautiful intense ruby red, the nose reveals its great personality: fruits and red flowers, raspberries, currants, black cherry jam, purple and wild rose invade the nose. In the mouth it is sweet, but not cloying. A nice freshness that accompanies the soft and round taste.

Cantina Fasoli Gino is located in the Verona area, a wine producer since 1925 and historically the site of great innovation. With an activity that obtains its fruits from the vineyards in splendid areas such as the Val d'Illasi or the hills that frame Lake Garda, since 1984 it has been cultivating vines with the organic method, which since 2006 has been joined by the biodynamic one. Located in an area typically known for its production of white wines, the estate offers products such as Lugana, Soave and Bardolino Chiaretto. These are generally soft, balanced and fresh, endowed with elegance and versatility that comes from the native grapes and the minerality of the soil. All soft, elegant, decisive and enveloping wines, extremely cared for with periodic tastings during the ageing process. But Fasoli Gino's product offer does not end there. Elegant and fragrant sparkling wines are also produced in this winery. They exhibit predominantly bitter tones, with an acidity that tends to preserve the sensation of freshness of their Prosecco.
