Farina, a family that has inherited a passion for wine and carrys it forward with conviction and love. 45 hectares of vineyards in the Valpolicella Classica area: Ten of these are owned by the winery itself and 35 are the property of historical winemakers that the Farina family sees as true ‘accomplices’ in the production of their wines. This Recioto della Valpolicella is the Veneto sweet wine par excellence, and without a doubt one of Italy’s most famous sweet wines. This wine is produced from partially dried grapes, the same grapes which are used to make Amarone and which are native to the Valpolicella Classica area. Only the ‘recie’ or ‘ears’ of the bunch are used, so the uppermost part, where the sweetest and most delicious grapes grow. This is what gives this wine its name. The grapes used to produce Recioto della Valpolicella Classico DOCG come from the hills of Negrar, from chalky volcanic soils 300 metres above sea level. The Corvina, Rondinella, and Molinara grapes are selected and harvested by hand and naturally over-ripened for around 130 days in a drying loft where the temperature, humidity, and weight loss are constantly monitored. The grapes are crushed and destemmed at the end of December, followed by natural cold maceration for around ten days, the inoculation of the yeasts, and slow fermentation with regular pump-overs. After around 30 days, a portion is drawn off and the remaining grapes, which are practically dry, are pressed in this must or wine to obtain a natural sweetness and to intensify the aromas. The wine is allowed to rest for a few months in stainless steel tanks followed by bottle ageing. A beautifully intense ruby red, the huge personality of this wine becomes evident on the nose, with heady notes of red fruit and flowers, raspberries, currants, black cherry jam, violets, and wild roses. In the mouth, it is sweet without being cloying. A pleasant freshness accompanies the soft, rich taste. This is the perfect sweet dessert wine to accompany dry and chocolate desserts.
