At the end of fermentation, following the first racking, the wine remains on the fine lees until February. Continuous bâtonnage enhances the body and harmonises the flavour. Per 100ml: 305kJ/73kcal
It has a straw-yellow colour, dotted with subtle greenish highlights. On the nose, delicate aromas of white-fleshed fruit, such as peach and mulberry, emerge, alongside notes of apple and citrus. On the palate, it is dry, medium-bodied and intense, with citrus notes and a herbaceous finish.
Excellent as an aperitif, this white wine pairs perfectly with flavourful fish dishes and fresh cheeses.
To fully appreciate its style, this wine should be served at a temperature of 10–12°C.
