Paololeo was destined to produce wine from the family vineyards of Masseria Monticello. What he probably did not expect at the outset, in the early 1990s, was to become one of the most important producers in Salento. One of the most beautiful areas in southern Italy, it is constantly buffeted by both the warm sirocco winds and the cold tramontana, creating significant temperature fluctuations that contribute to the quality and aromatic variety of the grapes produced here. Located right in the heart of the Salice Salentino DOC, more precisely in the municipality of San Donati, the Paololeo winery boasts 25 hectares of vineyards and is a family-run business managed with passion by its namesake heir, Paololeo. Rosarose Spumante Brut is a Negroamaro-based Apulian sparkling wine. The grapes are harvested before they are fully ripe in the second ten-day period of August; the must produced then remains in contact with the skins before being fermented in stainless steel. This is followed by the second fermentation using the Charmat method. Pale pink in colour, it has a lovely fine and persistent perlage. Delicate on the nose with notes of small red fruits; on the palate, it is smooth, fresh and savoury.
A sparkling wine that can accompany you every day; it is perfect from aperitifs to pairing with fish and shellfish dishes.
To fully appreciate its style, this wine should be served at a temperature of 10–12°C.
