Paololeo was destined to produce wine from the Masseria Monticello family vineyards. What he probably did not expect at the beginning, in the early nineties, was probably to become one of the most important realities of Salento. One of the most beautiful areas of southern Italy, is constantly whipped by both the warm winds of sirocco and the cold ones of tramontana, creating major thermal changes that contribute to the quality and aromatic variety of grapes produced here. Located right in the heart of the DOC Salice Salentino, more precisely in the town of San Donati, the Paololeo winery can count on 25 hectares of vineyards and a family run run with passion led by the heir of the same name, Paololeo. Rosarose Spumante Brut is a Apulian sparkling wine made with Negroamaro. The grapes are harvested not completely ripe in the second decade of August; the must then produced remains first in contact with the skins then is fermented in steel. It is then foamed with the Charmat Method. Pale pink colour, it has a fine and persistent perlage. Delicate nose with notes of small red fruit, in the mouth it is soft, fresh and savory. A bubble that can accompany you every day, is perfect from aperitif to pairing with the cuisine of fish and shellfish. The Paololeo winery was established in the heart of Salento, in Puglia, and from the start set itself the goal of producing high-quality wines to suit all tastes and budgets.
