Before being released on the market, the wine rests in the bottle for six months. The malolactic fermentation takes place in barriques and tonneaux of second and third passage, during which the wine remains on the noble lees until the following spring. It presents an intense and brilliant ruby red color with garnet reflections. On the nose, sweet and enticing fruity aromas of cherry, sour cherry, pomegranate, and blood orange stand out, accompanied by hints of licorice and sweet spices such as star anise and vanilla, along with notes of black pepper. The bouquet is complex, with a predominance of fresh fruit and excellent aging potential. On the palate, the wine offers remarkable finesse. It enters round, with the fruit immediately taking center stage, maintaining perfect dryness. Freshness and great sapidity add dynamism to the sip, while the body is sinuous, despite the significant extract. The tannic structure is fine. This wine pairs beautifully with rich dishes from the Apulian tradition, such as aged cheeses, braised meats, roasts, and stews. It also complements rustic first courses, like pasta and beans or legume and grain soups. The ideal serving temperature is 15°-17°C.
