When speaking about Bortolomiol, you are really talking about the history and culture of Italian sparkling wine. The family’s presence in the hills of Valdobbiadene reaches back to the start of the 18th century, when Bartolomeo Bortolomiol cultivated the first vineyards with passion. The tradition was passed down through the generations, until Giuliano Bortolomiol, a young graduate of the Conegliano School of Winemaking, now considered to be among the great pioneers of Italian sparkling wine production and a master of the Martinotti method, founded what is now the winery in the post-WWII period. Today, the company is managed by his four daughters. It covers an area of around five hectares cultivated with organic farming and benefits from a vast network of partners who are united by a project aimed at the continuous updating of wine growers’ technology, the identification of the most prestigious vineyards, and the sharing of knowledge in order to obtain grapes of the very best quality. Prosecco Valdobbiadene Brut ‘Prior’ perfectly represents the importance of the Bortolomiol family in the history of Prosecco. It was, in fact, this wine that inaugurated the ‘Brut’ dosage in 1960, since until then, only the Dry and Extra Dry versions were produced. Even its name, derived from the Latin, means ‘first’! This Veneto sparkling wine is made exclusively from Glera grapes from the vineyards of the Valdobbiadene hills. The grapes are harvested completely by hand to allow only the best bunches to be selected. Once they arrive at the production facility, the grapes are pressed gently and allowed to ferment in stainless steel tanks at a controlled temperature. The second fermentation takes place in pressure tanks, where the wine is then left for a few weeks to age before being bottled. Bright straw yellow in colour, it has a fine, persistent perlage that helps to retain a taut and pleasing drinkability. The fruity and floral aromas are highlighted on the nose, with scents of apple, pear, exotic fruit, and yellow flowers. It has a slightly vegetable and mineral finish.
