Production

This Prosecco Asolo Superiore Extra Brut Millesimato from Montelvini is produced using Glera grapes from a single exceptional vintage. Its vinification, carried out using the Martinotti-Charmat method, focuses on bringing out the full expression of the Asolo terroir, with careful temperature control to preserve the aromas and a low sugar dosage that enhances its freshness and minerality. 100 ml: E=277 kJ/66 kcal

Organoleptic Characteristics

In the glass, it presents a straw-yellow colour and a very fine, persistent perlage. The bouquet is broad and fruity, with delicate floral notes, hints of apple and pear, and a distinctive mineral undertone. On the palate, it is dry yet creamy and well-structured, with a pleasant acidic freshness and a savoury quality that enhances the olfactory sensations, making it vibrant and balanced.

Occasion and Pairing

Thanks to its pronounced dryness and minerality, this Extra Brut pairs magnificently with fish dishes, particularly shellfish and raw seafood. It is also ideal as an aperitif, thanks to its freshness, and goes well with light pasta dishes, delicate white meats and fresh cheeses.

Montelvini

Not far from Verona is the small village of Cavaion Veronese, where the Monte Saline winery has been producing quality Veneto wines since the early 1970s.
