Production

The winemaker, a native of Manduria, has contributed like few others to the redemption of Apulian wine and the renaissance of Primitivo, demonstrating just how much class and elegance lie hidden in a grape variety long forced to remain on the sidelines. His SE comes from newer vineyards, still planted using the very dense Apulian alberello system, reaching a density of 12,000 vines per hectare. This means that each vine yields a small quantity of grapes, but they are highly concentrated. The SE, Primitivo di Manduria, was first bottled in 2012. Unlike the ES, this more modern version of Gianfranco Fino’s Primitivo is aged for nine months in first- and second-use barriques.

Organoleptic Characteristics

The colour is impenetrable; on the nose, fruity notes of cherry, blueberry, blackberry and morello cherry rise, resting on a tantalising balsamic and sweet spice backdrop. The palate is of great density, where softness reigns supreme, leading to a most pleasant finish in which the acidity necessary to balance the wine emerges.

Occasion and Pairing

Undoubtedly an iconic bottle from Southern Italy, perfect for making a great impression at a Sunday lunch and a delightful accompaniment to red meat dishes.

To fully appreciate its style, this wine should be served at a temperature of 16–18°C.

THE WINERY

Gianfranco Fino

At the end of the nineties the Serragghia farm was born thanks to a bolt of lightning of the founder Gabrio Bini, for the island of Pantelleria. The farm Bini is now run by Giotto, the son of Gabrio, who together with his father works in a regime of organic agriculture both in the vineyard and in the cellar. Fermentation takes place spontaneously with indigenous yeasts in Spanish amphorae buried in the tuff and long macerations on the skins.
