The Le Piane winery is situated in the Monte Fenera Natural Park, in the province of Novara, and is now one of the leading names in winemaking in northern Piedmont. Mimmo Rosso from Le Piane is a red wine produced from a blend of Nebbiolo, Croatina and Vespolina in the municipality of Boca, in the province of Novara. The wine is named Mimmo in honour of a great man who contributed to the qualitative growth of Le Piane. Mimmo was created to forge a new path by combining the best-known grapes of these areas, which are harvested by hand and then destemmed and crushed, followed by fermentation and a long maceration of 30 days for the Nebbiolo, and two years’ barrel ageing for the Croatina and Vespolina. In the glass, Mimmo presents a ruby red colour with garnet highlights, whilst the nose reveals hints of plum, wild strawberries, liquorice and aromatic herbs. On the palate, it is fresh and mineral, characterised by velvety tannins.
Mimmo is perfect with pasta dishes, meat dishes and mature cheeses: in particular, it pairs perfectly with Fassona beef.
To fully appreciate its style, this wine should be served at a temperature of 16–18°C.
