TASTING NOTES

Production

Zuplun is a distillery born from the vision of Florian Rabanser, who years ago decided to purchase a farmstead in Siusi allo Sciliar (Seis am Schlern), a village on the slopes of the Dolomites (at an altitude of over 1,000 metres) not far from Bolzano, to begin producing distillates and liqueurs using local herbs and ingredients, with the aim of expressing his land and his personality. The harmony in combining ingredients, honed in his previous profession, and his forthright and determined character form the basis of his success and are reflected in his products. His range includes liqueurs, spirits, grappas, gins and rums, which regularly attract great interest from the public and win international awards.

Organoleptic Characteristics

Zuplun’s nocciolino liqueur has the aroma of toasted hazelnuts, with a balanced and pleasant sweetness.

Occasion and Pairing

The hazelnut liqueur, with its sweet, toasted aroma, is perfect for accompanying chocolate desserts, vanilla ice cream or biscuits. It also surprises when paired with savoury dishes, served with mature cheeses or crostini with gorgonzola and honey. In the world of drinks, it pairs well with espresso, cappuccinos or creamy cocktails, adding a smooth and refined touch to every sip.

Serving Temperature

To fully appreciate its character, this liqueur should be served at a temperature of 8°C.

Allergens: Nocciole

THE WINERY

Zuplun

The name Zýmē comes from the Greek and means yeast, a fundamental element in the world of oenology, but also a symbolic element that recalls naturalness. Nature is also emphasised in the architectural construction of the company. Founded by Celestino Gaspari, the Zýmē winery represents the true synthesis between man and terroir and is located in the heart of Valpolicella Classica in San Pietro in Cariano, in an ancient sandstone quarry dating back to the 15th century. Looking at the winery from above, one can see the pentagonal shape of the vine leaf, and each tip corresponds to one of the five main elements for wine production: man, vine, earth, sun, water. The various production processes also take place in accordance with nature's timing and through a special knowledge of production processes. Geologically speaking, we are located on the slopes of the Lessini Mountains, in a soil consisting of marly and earthy limestone also known as “Pietra Gallina”, which gives minerality and freshness to the Zýmē wines. In perfect balance with the winemaker's idea of sustainability, the Zýmē winery has always sought to revalue and enhance the indigenous grape varieties cultivated in nine hectares of vineyards. Name and address of producer/distributor: Az. Agr. Zýmē - Via Ca' del Pipa, 1 37029 San Pietro in Cariano, Località Mattonara (VR). Products from this winery should be stored in a cool, dry place away from heat sources.
