In the 4 hectares of property is grown most of the fruit used for production. Herbs that cannot be grown are harvested in the woods, where they grow spontaneously. Capovilla distillates are produced with spontaneous fermentations, mathematical precision distillations, long years of aging in steel, producing grappa of very high calibre. Grappa Valpollicella di Capovilla is made by distilling top quality pomace from Valpollicella. The main vine is Corvina with lower percentages of Corvinone, Rondinella and other grapes in small quantities. Like all Gianni Capovilla distillates, Grappa di Valpollicella is the synthesis, the purest juice of the raw material that generates it. Dry, dry, elegant and austere. It is a strict and soft grappa at the same time, of great pleasure and classicism. Meditation distillate, to enjoy every nuance. To fully appreciate its style, this distillate should be served at a serving temperature of 12/14 ºC.
