TASTING NOTES

Zuplun is a distillery created from the vision of Florian Rabanser who years ago decided to acquire a farm in Siusi allo Sciliar (Seis am Schlern), a town on the slopes of the Dolomites (more than 1000 m above sea level) not far from Bolzano, to begin the production of high-quality distillates with local herbs and ingredients, with the aim of expressing his land and his personality. The harmony in combining ingredients gained in the previous profession and his sincere and determined character are the basis of his success, reflected in his products. His range includes liqueurs, brandies, grappas, gins and rums which regularly attract great interest from the public and international awards. The Blauburgunder Pinot Noir grappa is produced with Pinot Noir grapes grown in small vineyards in Alto Adige such as the Stroblhof in Appiano. Craftsmanship in alembic stills, distilled twice with the bain-marie technique in small copper boilers. Light and transparent colour. On the nose the Pinot Noir grapes give a defined and elegant aroma of black cherry and ripe berries with a hint of bitter almond. THE WINERY

Zuplun

The name Zýmē comes from the Greek and means yeast, a fundamental element in the world of oenology, but also a symbolic element that recalls naturalness. Nature is also emphasised in the architectural construction of the company. Founded by Celestino Gaspari, the Zýmē winery represents the true synthesis between man and terroir and is located in the heart of Valpolicella Classica in San Pietro in Cariano, in an ancient sandstone quarry dating back to the 15th century. Looking at the winery from above, one can see the pentagonal shape of the vine leaf, and each tip corresponds to one of the five main elements for wine production: man, vine, earth, sun, water. The various production processes also take place in accordance with nature's timing and through a special knowledge of production processes. Geologically speaking, we are located on the slopes of the Lessini Mountains, in a soil consisting of marly and earthy limestone also known as “Pietra Gallina”, which gives minerality and freshness to the Zýmē wines. In perfect balance with the winemaker's idea of sustainability, the Zýmē winery has always sought to revalue and enhance the indigenous grape varieties cultivated in nine hectares of vineyards.
