TASTING NOTES

The Cavalleri family's holdings in Erbusco were first documented in the 15th century, but it is from the late 1960s onwards, thanks to the contribution of Gian Paolo Cavalleri and his son Giovanni, that the company began its contemporary journey, carving out a place for itself among the companies that have been able to make the most of the vocation of the land and the quality of the wines of Franciacorta. Guided to this day by Giovanni's grandchildren, Cavalleri now owns 42 hectares of vineyards, cultivated according to principles of utmost respect for the environment and the ecosystem, so as to be able to guarantee the highest quality grapes in the winery, and to be able to best represent their seasonal and varietal characteristics. Made from only Chardonnay grapes from the oldest vineyards with the best exposure, Cavalleri Collezione Grandi Cru is a Franciacorta with great finesse and balance. After the first fermentation and 10% ageing in stainless steel and wood, this Franciacorta Millesimato stays on the lees for about 60 months. The wine in the glass is a beautiful intense golden yellow, with a lively and persistent perlage. Varietal notes typical of Chardonnay dominate the nose, such as white-fleshed fruit and flowers, with a slightly herbaceous touch, followed by buttery and fragrant notes. The palate is taut and fresh, with a perfect balance between volume and lightness of the wine. Cavalleri's Collezione Grandi Cru is a very pleasant refined sparkling wine, characteristics that make it perfect to drink during a romantic dinner, paired with fish dishes, such as a dish of raw fish or seafood risotto.
