Ayunta is a small winery situated at almost 700 metres above sea level, on the northern slopes of Mount Etna in Sicily, near the small village of Randazzo, north of the city of Catania. Their aim is to produce wines that best express the character of the terroir and the native grape varieties of Etna. The wines express elegance, balance and freshness, highlighting the pure character of the terroir and the distinct differences of each vintage across every single vineyard. There are approximately 3 hectares of vineyards spread across various points on the slopes of Mount Etna, where local red grape varieties such as Nerello Mascalese and Nerello Cappuccio are cultivated, whilst Carricante and Catarratto are the white varieties. The terroir is obviously volcanic, with the presence of rocks and ash, but varies from one plot to another depending on the geological history of the volcano’s eruptions. Etna Rosso Navigabile is a Sicilian red wine produced from a careful selection of 90% Nerello Mascalese and 10% Nerello Cappuccio grapes. Following spontaneous fermentation with 18 days’ maceration, it is aged in large cherry and oak barrels for 14 months. 100 ml: E=311 kJ/74 kcal
Deep ruby red in colour, the nose releases fruity, floral, spicy and unmistakably mineral notes. On the palate, it is a dry, warm wine with good length and intensity. The acidity and savoury notes are particularly interesting.
A wine suitable for any occasion and one that pairs very well with red meats.
To fully appreciate its style, this wine should be served at a temperature of 14–16°C.
