Dolcetto d'Alba Mr. Scarlet is a wine produced from 100% Dolcetto grapes, which are harvested by hand in crates towards the middle and end of September. The grapes are pressed and destemmed, followed by a temperature-controlled fermentation in steel tanks with indigenous yeasts and maceration on the skins with repeated manual punching to promote malolactic fermentation. The blending takes place in the autumn after the harvest and the wine rests in steel until the following spring-summer. Aging takes place in stainless steel containers for at least 12 months. Mr. Scarlet’s Dolcetto d'Alba is presented to the glass with an intense red color, with beautiful shades of purple color. The nose has a wide assortment of ripe red berries: cherry, blackberries, raspberries, plum, which with time fade into more evolved notes reminiscent of spices. The taste is pleasantly tannic, savory and structured and still recalls the sensations of fruit. It is a wine to drink young over 2 or 3 years, to be enjoyed with appetizers of land and with tasty first courses typical of Piedmontese cuisine. To fully appreciate its style, this wine should be served at a serving temperature of 14/16 ºC.
