In the winery, the grapes undergo a traditional white winemaking process, which includes a gentle pressing and subsequent alcoholic fermentation of the must in stainless steel tanks. After fermentation, the wine matures in stainless steel for several months before bottling, followed by an additional aging of 12-18 months in glass prior to its final release on the market. The ‘Calypsos’ Derthona Timorasso showcases a brilliant straw-yellow color. The aromatic bouquet is characterized by intense aromas of ripe fruit and quince, accompanied by mineral notes and hints of dried fruit, evoking almond, hazelnut, flint, and graphite. On the palate, the progression is rich, soft, and well-bodied, with excellent structure. Its pronounced savory freshness and persistent finish give this Timorasso a highly gastronomic character. It is recommended to pair the Derthona ‘Calypsos’ with traditional Piedmontese dishes, such as agnolotti del plin, gnocchi with Castelmagno, and the numerous risottos that define one of Italy’s most refined cuisines. It also pairs wonderfully with freshwater fish, such as trout. The ideal serving temperature is 8-10°C.
