David Léclapart's philosophy is based on a deep and coherent biodynamic approach, in which the vineyard is considered as a living organism in perfect balance with its environment. The vineyards, cultivated without the use of synthetic chemicals and according to the natural rhythms of the earth, are located on gypsum soils of extraordinary vocation, capable of giving wines energy, verticality and a marked mineral identity. The main grape variety is Chardonnay, interpreted in a pure, vibrant and deeply territorial form. The grapes are harvested manually and vinified with minimal intervention, through spontaneous fermentations and long refinements that allow the wine to develop complexity, depth and expressive precision. In the cellar, every choice is guided by the desire to preserve the integrity of the raw material: minimal or no dosages, no standardization, and a constant search for natural balance.
