TASTING NOTES

Champagne Brut Reserve Ambonnay is a fascinating and original Classic Method, a splendid interpretation of one of the most representative Recoltèe Manipulant of the region. Ambonnay Brut Resérve is obtained from a blend consisting mainly of Pinot Noir and a small balance of Chardonnay. After the pressing of the bunches, a spontaneous alcoholic fermentation is carried out by indigenous yeasts and malolactic steel. Then a refermentation in the bottle with disgorgement to voleè, with dosage before bottling and a stop of at least 24 months on the lees. Brut Reserve Ambonnay is expressed in the glass with an intense straw yellow color and an extremely fine perlage. The nose reveals notes of orange peel, hazelnut, small red fruits and mineral hints. The palate expresses a true extractive richness is contrasted by a generous dose of salt and freshness. This Champagne is ideal with a spaghetti with clams, or with a seafood risotto.
