Cuvée N.P.U. - «Nec Plus Ultra», was born from the desire to produce, despite the costs and difficulties, the largest possible Champagne. Produced only in the best vintages, fermentation takes place in small oak barrels in which the wine spends the first months. During this period each Cru of Chardonnay and Pinot Noir grapes develops their aromatic complexity. The second fermentation takes place after the bottle is bottled and follows a long maturation in the shade in the cool cellars of the Maison of Bruno Paillard for about 12 years or more, then continue with disgorgement. Cuvée Nec Plus Ultra is an Extra Brut, in which the sugar dosage is reduced to a minimum. At the glass of brilliant gold color, it has a serene and very fine perlage. The nose opens with notes of wood, acacia honey and fruity and floral nuances of candied fruit, pineapple and jasmine. The flavor is intense and creamy, the palate gives vivacity with fruity nuances of blackberry and toasted apricot. Maison Bruno Paillard recommends it in combination with a salad with lobster, black truffle, foie gras and balsamic vinegar. To fully appreciate its style, this wine should be served at a serving temperature of 8/10 ºC.
