Production

Agrapart’s Champagne Extra Brut 7 Crus is crafted from a blend of grapes sourced from seven prestigious crus in the Côte des Blancs and neighbouring areas, selected to best express purity, tension and terroir. The primary grape variety is Chardonnay, complemented by a small percentage of Pinot Noir and Pinot Meunier. The grapes are harvested by hand and gently pressed. Fermentation takes place mainly in stainless steel, with care taken to preserve freshness and aromatic precision. The second fermentation follows the Méthode Champenoise, with a long ageing on the lees that imparts complexity and depth. The Extra Brut dosage is minimal, designed to enhance minerality and expressive clarity.

Organoleptic Characteristics

Visually, it presents a brilliant straw-yellow colour and a fine, continuous perlage. On the nose, it offers an elegant and taut profile, with notes of fresh citrus, green apple and white flowers, accompanied by hints of chalk, yeast and light bakery notes. On the palate, it is vibrant and vertical, with marked freshness, pronounced savouriness and a precise, slender structure. The finish is long, dry and deeply mineral.

Occasion and Pairing

A Champagne of great precision and character, ideal for refined aperitifs and dedicated tastings. It pairs perfectly with oysters, shellfish, seafood, sushi and raw or lightly prepared fish dishes.
