The Maison Dom Pérignon is nestled in the heart of Champagne on a hill overlooking the Marne Valley. The Hautvillers Abbey is the cradle of the most famous Maison de Champagne in the world. A selection of the best Pinot Noir and Chardonnay grapes from a single vintage allows one to better interpret the individual character of each Champagne. Dom Pérignon rules out the possibility of creating a Vintage when the vintage is not the best quality. The 2013 growing year was characterised by a cold, wet winter that gave way to a dreary spring where cool and rainy conditions delayed the vegetative cycle. The summer was hot and dry, which favoured a regular and gradual grape maturation. Rains recorded at the beginning of September and good ventilation helped preserve the health of the vineyard. Grapes from this late harvest resulted in a perfect balance between acidity and roundness and a beautifully aromatic richness. After a process of at least eight years, Champagne Dom Pérignon Vintage Brut attains its perfect balance. On the nose, it is complete and ever-changing, a mix of flowers and fruit followed by vegetal and mineral notes. The bouquet is tactile, a discreet invitation to follow the white flower nuances, surrounded by the sweetness of apricot and Mirabelle plum, which then gives way to rhubarb, mint and white pepper. It is energetic and vibrant on the palate, with an elegant and invigorating perlage. The finish converges with acidic, bitter notes, before narrowing down to hot, spicy notes of ginger, tobacco and toasted aromas. Its charm makes it an elegant choice when paired with raw fish starters, shellfish and delicate main courses.
