TASTING NOTES

The Champagne Brut Resérve Polisy is named after the department of Aube, in the Côte des Bars, from which I come the grapes Pinot Noir and Chardonnay, obtained from vineyards located on a clay-type soil and grown organically. Following a manual harvest, the spontaneous fermentation of the grapes takes place in steel and wood. In order not to use too high doses of sulfur, Beaufort prefer the development of malolactic, always spontaneously, for their base wines. The refermentation in bottle takes place according to the Champenoise method and the wine rests on the lees for 24 months. Champagne Polisy is presented to the glass of straw yellow color. The nose can be perceived hints of yellow fruit and herbs. References to the world of pastry remain more in the background. The palate is creamy, fresh, opulent, but fine, with beautiful persistence and great minerality. This Champagne is excellent as an aperitif with a fish crudité, or even in combination with a fish soup with tomato sauce. To fully appreciate its style, this wine should be served at a serving temperature of 16/18 ºC. Read more Read less
THE WINERY

Andre Beaufort

Andre Beaufort is one of the first Champagne companies that since the end of the sixties has taken a path in contrast to the interventionist practices in the vineyard and cellar, based on the use of synthetic products and chemical agents, choosing to use only natural products and manual/ mechanical processing. All wines undergo their first fermentation in exhausted wooden vats without the use of selected yeasts. All base wines undergo malolactic fermentation. Today Andre Beaufort’s style is one of the most distinctive and recognized, capable of interpreting different terroirs ranging from the grand cru of Ambonnay, Montagne de Reims, to the emerging area of Polisy nell'Aube. Name and address manufacturer/distributor: Champagne Andre Beaufort - 2 Chem. du Ru Désiré, 10110 Polisy, France. The products of this cellar should be stored in a cool and dry place away from heat sources.
