The Champagne Brut Resérve Polisy is named after the department of Aube, in the Côte des Bars, from which I come the grapes Pinot Noir and Chardonnay, obtained from vineyards located on a clay-type soil and grown organically. Following a manual harvest, the spontaneous fermentation of the grapes takes place in steel and wood. In order not to use too high doses of sulfur, Beaufort prefer the development of malolactic, always spontaneously, for their base wines. The refermentation in bottle takes place according to the Champenoise method and the wine rests on the lees for 24 months. Champagne Polisy is presented to the glass of straw yellow color. The nose can be perceived hints of yellow fruit and herbs. References to the world of pastry remain more in the background. The palate is creamy, fresh, opulent, but fine, with beautiful persistence and great minerality. This Champagne is excellent as an aperitif with a fish crudité, or even in combination with a fish soup with tomato sauce. To fully appreciate its style, this wine should be served at a serving temperature of 16/18 ºC.
