On the nose, it is an explosion of freshness: notes of green apple and citrus blend with an almost vibrant chalky minerality. On the palate, the wine is taut, straightforward and incredibly dynamic, with a burst of acidity that cleanses the palate and continually invites you to drink more.

Occasion and Pairing

It is the ideal sparkling wine for a radical aperitif or to accompany simple, raw seafood dishes.

THE WINERY

Chavost

Chavost is one of the most dynamic and revolutionary realities of contemporary Champagne, a symbol of expressive freedom, sustainability, and a return to the essence of wine. Founded in the heart of the Vallée de la Marne, in Chavot-Courcourt, the cooperative was founded with the aim of enhancing the work of local winemakers through a shared and deeply respectful vision of the area. Chavost's philosophy is based on a principle as simple as it is radical: produce Champagne without artifice, leaving it to the terroir to speak directly and authentically. Vineyards are grown according to organic and sustainable practices, with a growing focus on natural approaches that preserve soil vitality and ecosystem balance. The plots extend over clayey-limestone soils typical of the region, where the classic Champagne grape varieties - Pinot Meunier, Chardonnay and Pinot Noir - find a fresh, vibrant and immediate expression. Pinot Meunier, in particular, represents the soul of the region, giving wines roundness, fruit, and accessibility, without sacrificing depth and character. In the cellar, the approach is essential and contemporary: natural fermentations, minimal interventions, and, above all, the lack of dosage in many cuvées, a choice that clearly defines the house's style. Chavost Champagnes are pure and direct sans dosages, capable of precisely expressing the raw material and the vintage, without superstructures. The result is taut, fresh and identity-based wines, characterised by great drinkability and a clear territorial imprint. Each bottle of Chavost is a sincere and contemporary expression of Champagne, an invitation to rediscover wine in its freest, most essential and authentic form. Name and manufacturer address: Chavost – 7 Rue de la Fontaine, 51530 Chavot-Courcourt, France. Wines should be stored in a cool, dry place, away from sources of heat and direct light.
