Production

Pietrabianca Chardonnay Castel del Monte DOC is an organic wine made from Chardonnay and Fiano grapes, which are vinified separately. The grapes are harvested in the early hours of the morning to prevent oxidation during the day. They are then destemmed and gently crushed, before being vinified in stainless steel tanks to allow for natural clarification. The Chardonnay grapes undergo alcoholic and malolactic fermentation, followed by ageing in French oak barriques. The Fiano, on the other hand, is fermented solely in stainless steel to preserve its freshness. Once the winemaking processes are complete, the two wines are blended and bottled a few months later. Further ageing in the bottle follows before the wine is released. Nutritional values per 100ml: E = 289kJ/69kcal

Organoleptic Characteristics

Pietrabianca Castel del Monte is bright yellow in colour with greenish highlights, offering notes of yellow peach, grapefruit, exotic fruits, jasmine, lavender and subtle toasted and vanilla nuances. Elegant and fresh, Pietrabianca Chardonnay possesses a pleasant minerality.

Occasion and Pairing

It pairs perfectly with raw fish starters, tartare or stewed fish main courses.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 12–14°C.

THE WINERY

Tormaresca

The beginning of vine cultivation along with the production of wine by the Tornatore family dates back to 1865 when the great-grandfather of the current owner took up farming. In 1910, Giuseppe, the current owner's grandfather, built a house with an adjoining millstone in the Piano Fiera district with an adjoining 2 hectares of vineyard, to which a further 2 hectares were added on the northern slope of Etna in the Piano Felci district at an altitude of 1,000 metres above sea level. The Tornatore family has always had a detailed knowledge of the territories of the municipality of Castiglione di Sicilia, since grandfather Giuseppe and uncle Giovanni were appointed cadastral surveyors in the early 1930s, accompanying the topographer to survey parcels, to define boundaries and names of districts. A family, therefore, with deep roots in its territory of origin, which has never neglected its attachment to and respect for it and its traditions in successive generations.
