Biondi Santi is an important figure in the history of Italian viticulture and oenology, intimately linked to the denomination of Brunello di Montalcino. The story traces back to the mid-nineteenth century when Clemente Santi first started producing wine and winning his first international awards like the gold medal at the Universal Exhibition in Paris in 1867. It was also Santi who created Brunello di Montalcino, imposing extremely restrictive quality parameters on the other winemakers of the area, too, such as using only Sangiovese Grosso grapes and really low vineyard yields. A tradition that today puts this company at the forefront of Italian wine making excellence. Today the 25 hectares of 80-year-old vineyards grow exclusively Sangiovese Grosso grapes and yield only 40-50 quintals per hectare, for a total production of about 80,000 bottles. Biondi Santi's Brunello di Montalcino Riserva is a wine of extraordinary richness and longevity. A rare and unique wine produced only 40 times since 1888 to today, it still has an extremely limited production. Traditionally the grapes for the Riserva come from the oldest vines, which are over 25 years old. The ancient Tenuta Greppo cellar has a quiet, dark, secure room, dedicated exclusively to the ageing of Brunello Riserva. This historic cellar is where Biondi Santi keeps bottles of every Riserva vintage ever produced; it is an intimate place where the bottles are stored in small recesses, each one dedicated to a different vintage. No labels, marked only with a drop of beeswax on the cork stopper to ensure its integrity and durability over time. The Sangiovese Grosso grapes are harvested and selected by hand and vinified in vertical Slavonian oak barrels with the use of native yeasts. It is then aged for 3 years in Slavonian oak barrels. A very intense ruby red colour, with a fruity aroma with notes of dark cherry, pomegranate and orange. The Mediterranean note releases hints of thyme, rosemary and sage along with floral sensations of red roses, violet and undergrowth. The mouthfeel is sweet, seductive, charming and full-bodied, with tannins that highlight the palate-cleansing freshness. Very long and savoury aftertaste and finish. In the area of Montalcino and Pienza in the province of Siena, is the Biondi Santi winery, on the Tenuta Greppo estate. In an area known worldwide for its fine Tuscan red wines, Biondi Santi stands out for its Brunello, which has been produced, innovated and improved since the 19th century. After Clemente Santi started winemaking thanks studying the Sangiovese Grosso typical of the area, the winery still remains closely linked to its origins and history, recognised internationally for the production of sophisticated, elegant and refined wines. All while paying the utmost attention to organic and sustainable viticulture. With 25 hectares of vineyards, the estate produces no more than 80,000 bottles a year, including 10,000 of Brunello Riserva. The prestige of these Tuscan wines is influenced by many factors. Only the best grapes are selected, from vineyards that are at least 10 years old - and 25 years old for the Riserva. After being harvested completely by hand, the grapes are destemmed, crushed and fermented, which takes place at a controlled temperature in cement vats and tanks. Finally, the wine ages in oak barrels and is bottled no less than four years after harvest.
