An elegant Brunello, whose grapes from the Ripe al Convento vineyard are harvested following an initial careful selection in the vineyard, followed by fermentation in steel tanks with frequent pumping over to ensure better extraction of the anthocyanins and tannins that characterise its colour and structure. The subsequent period of ageing in wood has resulted in excellent stability and an increase in aromatic and structural complexity.
Ripe al Convento appears bright ruby red to the eye. On the nose, it is rich and varied, with notes ranging from ripe fruit—yet fresh and crisp—to floral aromas, before exploding into a kaleidoscope of tertiary aromas. Among the fruity notes, the ever-present wild berries stand out, alongside cherry and pomegranate. Among the tertiary aromas, immediately pleasing hints of graphite, bitter cocoa and Cuban cigar emerge. Ethereal, spicy and fresh, the nose is a crescendo of sensory discoveries, but it is on the palate that it explodes in all its power, well balanced by a dense tannic structure, without any particular harshness. The intense aromatic persistence is extremely long.
Perfect with roast red meats or mixed grills.
To fully appreciate its style, this wine should be served at a temperature of 16–18°C.
