TASTING NOTES

An elegant Brunello, whose grapes from the Ripe al Convento vineyard are harvested after a first careful selection in the vineyard, followed by a fermentation in steel tanks with frequent pumping over for better extraction of anthocyanins and tannins, that characterize color and structure. The subsequent period of aging in wood has allowed to obtain an excellent stability and an increase in aromatic and structural complexity. Ripe at the Convent appears bright ruby red. The nose is rich and varied, with notes ranging from well-ripe fruity, but fresh and crunchy, to floral and then explode with a kaleidoscope of tertiary scents. Among the fruity sensations emerge the inevitable berries along with cherry and pomegranate. Tertiary trays immediately appear pleasant memories of graphite, bitter cocoa and Cuban cigar. Ethereal, spicy, fresh, the nose is a crescendo of sensory discoveries, but it is on the palate that explodes in all its power, well balanced by a dense tannic texture, without any particular harshness.
