TASTING NOTES

Production

Each grape variety used in the wine is fermented separately in 30-hectolitre truncated-cone-shaped concrete vats, using only indigenous yeasts. After the first 2–3 days of open pumping over, the process switches to a single daily closed pumping over to promote better extraction. The timing of racking is carefully chosen, thanks to frequent tastings, and usually takes place after around 20 days. Once racked, the wine is transferred directly to barriques to complete malolactic fermentation. Ageing continues in French oak barriques, with 40% new oak, for a period ranging from 12 to 18 months. This process allows the wine to develop complexity and harmony. Thanks to its structure and balance, the wine has an extraordinary ageing potential, extending up to 20 years.

Organoleptic Characteristics

Visually, the wine presents an intense ruby red colour. On the nose, it reveals a bouquet rich in notes of wild berries, accompanied by spices and delicate floral nuances. On the palate, it stands out for its complexity and elegance, with well-integrated tannins that enrich its structure, giving rise to a long and pleasant finish.

Occasion and Pairing

Perfect for accompanying red meats, game, roasts and mature cheeses, this wine is also an ideal pairing for typical Tuscan dishes, such as Florentine steak and ribollita.

THE WINERY

Michele Satta

The winery Michele Satta is one of the most representative of the area of Bolgheri, but its birth happened in a completely random way. In 1974, Michele Satta, a student of Agriculture at the University of Milan, was on holiday on the Tuscan coast, near Castagneto Carducci. During this stay, he met the owner of a farm who offered him an internship during the harvest. This is how his passion for viticulture was born. After graduation, Michele started looking for land to rent to start a wine business and found old vineyards with an adjoining cellar, which became the basis for an adventure that would lead him to produce some of the best known labels in Bolgheri. The project was officially launched in 1983, one year before the creation of the DOC Bolgheri. Towards the end of the 80s, Michele bought his first land and planted his first vineyard in areas he considered particularly suitable, also starting the construction of the cellar. During this period, he undertook several trips to the main wine regions of the world, which enriched his experience and expanded his knowledge. Today, the winery covers 23 hectares of land, with an annual production of about 150,000 bottles.
