TASTING NOTES

Production

Alcoholic fermentation takes place in temperature-controlled stainless steel tanks. Contact with the skins lasts around three to four weeks and includes fermentation and subsequent post-fermentation maceration using the traditional submerged cap method. Malolactic fermentation takes place in stainless steel. Aged for approximately two years in 25hl oak barrels, followed by approximately one year of bottle ageing.

Organoleptic Characteristics

Garnet red in the glass, it reveals delicate and persistent aromas on the nose with hints of liquorice, rose and violet. Full-bodied and warm on the palate, with extremely elegant tannins and a long finish.

Occasion and Pairing

A great wine for substantial dishes, spit-roasted and grilled red meats, game, fine dining dishes featuring both red and white meats, and mature cheeses.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 16–18°C.

The Ratti winery is located not far from La Morra, in the province of Cuneo, in the very heart of the Barolo territory, amidst the gentle contours of the area's hills and the finest vineyards. It is located within the Abbey of Annunziata, and still boasts a production that is closely attached to ancient local traditions. The production of wines mainly follows the teachings of the monks who have inhabited the Abbey over the centuries. The few additions of the most advanced techniques have been carefully chosen to allow the final product to bring out the best of the unique properties of the soil and its most precious grapes.
