Barolo Parafada originates from the MGA of the same name in Serralunga d’Alba, one of the most renowned and austere areas of the Barolo appellation, characterised by calcareous-clay soils rich in mineral content, capable of imparting great structure and longevity to the Nebbiolo. It is produced exclusively from Nebbiolo grapes, harvested by hand from vineyards situated on well-exposed hillsides. Vinification follows traditional methods, with fermentation in stainless steel and prolonged maceration on the skins to extract complexity and elegance. Ageing takes place for several years in large oak barrels, followed by further rest in the bottle, allowing the wine to fully express the character of the cru.
Visually, it presents an intense ruby red colour with garnet highlights. On the nose, it is deep and complex, with aromas of ripe cherry, plum and wild berries, accompanied by notes of dried rose, violet, liquorice, fine spices, tobacco and subtle balsamic and mineral undertones. On the palate, it is powerful and structured, with dense yet elegant tannins, a lively freshness and a solid, coherent texture. The finish is long, persistent and harmonious, with great personality and remarkable ageing potential.
A Barolo of great character and depth, ideal for special occasions and for moments of mindful tasting. It pairs magnificently with red meats, braised dishes, roasts, game, rich traditional Piedmontese dishes and mature cheeses.
To fully appreciate its style, this wine should be served at a temperature of 16–18°C.
