Production

Barolo Parafada originates from the MGA of the same name in Serralunga d’Alba, one of the most renowned and austere areas of the Barolo appellation, characterised by calcareous-clay soils rich in mineral content, capable of imparting great structure and longevity to the Nebbiolo. It is produced exclusively from Nebbiolo grapes, harvested by hand from vineyards situated on well-exposed hillsides. Vinification follows traditional methods, with fermentation in stainless steel and prolonged maceration on the skins to extract complexity and elegance. Ageing takes place for several years in large oak barrels, followed by further rest in the bottle, allowing the wine to fully express the character of the cru.

Organoleptic Characteristics

Visually, it presents an intense ruby red colour with garnet highlights. On the nose, it is deep and complex, with aromas of ripe cherry, plum and wild berries, accompanied by notes of dried rose, violet, liquorice, fine spices, tobacco and subtle balsamic and mineral undertones. On the palate, it is powerful and structured, with dense yet elegant tannins, a lively freshness and a solid, coherent texture. The finish is long, persistent and harmonious, with great personality and remarkable ageing potential.

Occasion and Pairing

A Barolo of great character and depth, ideal for special occasions and for moments of mindful tasting. It pairs magnificently with red meats, braised dishes, roasts, game, rich traditional Piedmontese dishes and mature cheeses.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 16–18°C.

THE WINERY

Massolino

An artisanal brewery in the heart of Verona, Mastino was born about ten years ago from the union of the production and management experiences of its two partners, Mauro Salaorni and Christian Superbi. In recent years, the brewery has seen strong growth in production and organisation by offering unique craft beers, which are clean and clear without the need for filtration thanks to maturation in horizontal tanks. Produced by means of a low-fermentation process, which draws on the brewing tradition, the unique taste of Mastino beers is achieved through the careful selection of raw materials and the continuous search for innovative techniques. Given the preference for locally grown products, the Mastino brewery now produces its own barley and also plans to grow hops. Careful and painstaking production gives rise to various gradations of beer, from the blanche Altaluna to the renowned Cangrande and Monaco. According to tradition, Altaluna was the beautiful daughter of Mastino II, who gives her name to one of the brewery's most characteristic and renowned beers, a sweet and fruity blanche that encapsulates the best taste characteristics.
