The Barolo Parafada originates in the MGA of the same name in Serralunga d'Alba, one of the most suitable and austere areas of the Barolo appellation, characterized by calcareous-clayey soils rich in skeleton, capable of giving great structure and longevity to the Nebbiolo. It is produced exclusively from Nebbiolo grapes, harvested manually from vineyards located in well-exposed hilly locations. Winemaking takes place in keeping with tradition, with steel fermentation and prolonged maceration on the skins to extract complexity and elegance. The aging takes place for several years in large oak barrels, followed by a further rest in the bottle that allows the wine to fully express the character of the cru.
It appears to be a deep ruby red color with garnet reflections. On the nose it is deep and complex, with scents of ripe cherry, plum and berries, accompanied by notes of withered rose, purple, licorice, fine spices, tobacco and light balsamic and mineral nuances. On the palate it is powerful and structured, with dense but elegant tannins, a lively freshness and a solid and coherent taste texture. The ending is long, persistent and harmonious, with great personality and remarkable capacity for evolution.
Barolo of great character and depth, ideal for important occasions and moments of conscious tasting. It pairs beautifully with red meats, braised meats, roasts, game, rich dishes of Piedmontese tradition and aged cheeses.
To best enhance its structure and elegance, a service temperature of 16/18°C is recommended.
