Production

The wine undergoes spontaneous fermentation without The wine undergoes spontaneous fermentation without added yeasts in cement tanks for about 12 days, followed by submerged cap maceration. After pressing, malolactic fermentation begins, followed by aging in Slavonian oak barrels for 4 years, with an additional 6 months of bottle aging. This Barolo is a blend of the 5 Cru vineyards in Barolo: Liste, Cannubi, Fossati, Cannubi San Lorenzo, and San Pietro delle Viole. As such, it expresses both the elegance and power typical of Barolo from Barolo and the true Barolo of the past.

Organoleptic Characteristics

Ruby red with garnet reflections. On the nose, hints of red fruit and spicy notes. Pleasant acidity that adds freshness, with fine and smooth tannins.

Occasion and Pairing

Barolo, par excellence, pairs with important dishes such as traditional Piedmontese meat-based mains. Looking to world cuisines, we find goulash in Eastern Europe. In Japan, it pairs well with gyoza, grilled meats like beef, and even fish such as black cod. And if you wish, even a simple “special” toast is a perfect occasion!

THE WINERY

Borgogno

Since 1761, Borgogno is the most historic winery of Barolo. Even today the underground cellars represent a rare historical memory of Langa and the wines are produced according to tradition: long spontaneous fermentation without the use of selected yeasts in cement tanks and long aging in large Slavonian oak barrels. The fermentation practices have remained the same for many decades and over the years have been refined winemaking techniques that allow to have live wines, real and clean, different from year to year as they respect the characteristics of the vintage and always with the unmistakable Borgogno imprint, given by the long aging. Borgogno cultivates vineyards in Barolo, Madonna di Como and in the Colli Tortonesi, in full respect of the land, avoiding the use of chemical fertilizers, herbicides and practicing sustainable treatments. Since 2016, the company has been certified in organic farming, continuing to work in full respect of nature and the ecosystem, as a true expression of a territory, a tradition, a history, but always with an eye to the future.
