Production

Barolo Chinato is a fortified red wine from Piedmont that must be produced using Barolo DOCG wine (i.e. 100% Nebbiolo) which has already completed the minimum ageing period and passed the chemical, physical and organoleptic tests required by the production regulations, to which Cinchona calissaja bark is added. This is followed by at least one year’s ageing in casks, during which the wine blends all the aromatic components of the infusions and harmonises them. Bottle ageing will enhance the smoothness on the palate and improve the bouquet.

Organoleptic Characteristics

It has a splendid garnet colour with orange highlights. Hints of oriental spices, rhubarb, cherries in alcohol and sweet floral notes. On the palate, it is warm, with just the right amount of sweetness, well balanced by the typical almondy note imparted by the spices used.

Occasion and Pairing

Ideal for sipping after dinner, perhaps accompanied by a good bar of dark chocolate.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 16–18°C.
