The grapes are harvested slightly overripe to enhance the concentration of aromatic components. The drying process continues in special crates in the drying room, where ventilation is monitored daily and adjusted exclusively through natural methods by opening and closing windows. In February, the destemmed and crushed grapes are left in contact with the must inside temperature-controlled fermenters for over twenty days. Maturation and aging: 36 months in Veronese casks of 5 hl and barriques; 12 months in the bottle.

The finish is long, well-structured, and smooth. The name 'Cerasum,' meaning cherry, references the intense aroma of red fruit, cherry, and sour cherry that characterizes this high-quality Amarone. Additionally, the name evokes the ancient tradition of cherry cultivation in the Valtramigna area, where the winery is located. A true excellence!
