TASTING NOTES

The Amarone Classico of Ca' La Bionda, the most famous among the red wines of Veneto, is a blend composed mostly of Corvina and Corvinone with a small balance of Rondinella and Molinara. The grapes are usually dried until the end of January, losing about 40% of their weight in water. After crushing, the must, very dense and rich, ferments for a long time at low temperature in steel tanks and then goes into large oak barrels to age for three years. Once bottled it will still be at the cellars to rest no less than 8 months before being put on sale. Amarone of great concentration and rigor, dark ruby, compact and brilliant. It smells of black cherry both fresh and jam, a spicy sweet and deep notes of dried fruit. The mouthfeel is very rigorous and consistent, dry, powerful, warm and soft. The finish is long and clean thanks to the tannins. Ideal to accompany structure meat, game or mature cheeses. THE WINERY

Ca' La Bionda

In the heart of the historic Valpolicella Classico area, in the municipality of Marano di Valpolicella, lies the Ca' La Bionda winery. Founded in 1902 by Pietro Castellani who always had a great passion for the cultivation of his vines and the vinification of his grapes, the estate covers an area of 29 hectares in the hills, on clay soil at an altitude of between 150 and 300 metres, and with a south-eastern exposure, a favourable position for ripening grapes. The quality of the wines is the result of a family tradition in which passion and sacrifice have gone hand in hand. For more than four generations, the winegrowers and winemakers of the company have dedicated themselves to the processes of cultivating, harvesting, vinification and marketing of Ca' la Bionda products, paying particular attention to the phases of natural drying of the grapes destined for the great wines: Recioto and Amarone, and subsequent ageing in special oak barrels. In the vineyard owned by Piero Castellani, current owner and namesake of the founder, no herbicides or chemical fertilisers are used, and dry stone walls have been restored to create terraces favourable to good maturation of the grapes for the creation of fine red wines from the Veneto region.
