TASTING NOTES

Production

For the production of this Amarone della Valpolicella Classico, the finest bunches are selected by hand and laid out on trays, then left to rest in the drying room for four months, during which the natural drying process takes place. Between January and February, the dried grapes are pressed; their thick juice is left to ferment and macerate for 30–40 days in stainless steel. After racking, the wine undergoes a long ageing process in large oak barrels of 30 and 50 hl, followed by further ageing in the bottle. 100 ml: 344 kJ / 82 kcal

Organoleptic Characteristics

It is a purplish-red colour with intense, brilliant ruby highlights. It immediately captivates the nose with an explosion of aromas of cherry, black cherry, ripe red fruits, undergrowth, flowers and orange peel, which blend with elegant spicy notes, aromatic herbs, tobacco, dark chocolate, coffee, liquorice and pepper. On the palate, it is perfectly balanced, offering an immediate warm and velvety sensation. It is full-bodied, with a solid mouthfeel, supported by a fresh vein and soft tannins. The whole fruit and spice notes return continuously, in a polyphonic harmony.

Best enjoyed with red meats and roasts.

THE WINERY

Rubinelli Vajol

In the hilly areas of Veneto lies the Conca del Vajol. With its soils with a strong presence of limestone and tufa, with traces of clay and skeleton, it is home to the Cantina Rubinelli Vajol and its 10 hectares of vines, in the heart of the Valpolicella territory. Perfect sun exposure of the vines and a temperate, well-ventilated climate provide ideal terrain for the cultivation of prized grapes, most of which are the indigenous Corvina, Corvinone, Rondinella, Molinara and Oseleta. The grapes are cultivated and cared for using different methods, the traditional ones and some more modern ones. In addition, the land is respected to the highest level with regards to its form, also thanks to the use of mechanical weeding instead of herbicides and synthetic fertilisers. The absolute quality of the wines produced in the winery is also due to a harvest that is entirely carried out by hand in successive steps, depending on the necessary maturation period of the grapes. The result is an absolute excellence of Veneto red wines such as Amarone, Valpolicella Classico Superiore, Recioto, Ripasso and Valpolicella Classico.
