Over the years, the Rubinelli family's desire to produce a Vajol cru that fully reflects the excellence of the product of this land has come to fruition: grapes of the highest quality, the result of ideal exposure to the sun and perfect drying in the ventilated and temperate climate of the Conca del Vajol. Amarone della Valpolicella Classico is produced by hand selecting the best grapes and then laying them out on wooden trays to rest in the drying larder for four months, which allows the natural drying process to take place. The dried grapes are then pressed between January and February to release a thick juice, which then ferments and macerates for 30-40 days in stainless steel. Racking is followed by long ageing in large oak barrels of 30 and 50 hl, after which the wine is aged in bottles. It is purple-red in colour with intense bright ruby reflections. Immediately impressive on the nose with explosive aromas of cherry, black cherry, ripe berry fruits, undergrowth, flowers and orange peel, which blend with elegant spicy notes, aromatic herbs, tobacco, dark chocolate, coffee, liquorice and pepper. In the mouth it is perfectly balanced, delivering an immediate warm and velvety feel on the palate. Full-bodied and robust on the palate, supported by a hint of freshness and soft tannins. THE WINERY

Rubinelli Vajol

In the hilly areas of Veneto lies the Conca del Vajol. With its soils with a strong presence of limestone and tufa, with traces of clay and skeleton, it is home to the Cantina Rubinelli Vajol and its 10 hectares of vines, in the heart of the Valpolicella territory. Perfect sun exposure of the vines and a temperate, well-ventilated climate provide ideal terrain for the cultivation of prized grapes, most of which are the indigenous Corvina, Corvinone, Rondinella, Molinara and Oseleta. The grapes are cultivated and cared for using different methods, the traditional ones and some more modern ones. In addition, the land is respected to the highest level with regards to its form, also thanks to the use of mechanical weeding instead of herbicides and synthetic fertilisers. The absolute quality of the wines produced in the winery is also due to a harvest that is entirely carried out by hand in successive steps, depending on the necessary maturation period of the grapes. The result is an absolute excellence of Veneto red wines such as Amarone, Valpolicella Classico Superiore, Recioto, Ripasso and Valpolicella Classico.
