Production

The Amarone Cavolo, primarily composed of Corvina, along with Corvinone and Rondinella, ages for two years in barriques and another two years in large Slavonian oak barrels.

Organoleptic Characteristics

In the glass, it has an intense ruby color with garnet hues, presenting aromas of macerated cherries and jam, deep tertiary and spicy notes, with hints of vanilla and coffee. The palate is warm, soft, and impactful, with great volume and length

Perfect for pairing with slow-cooked meat dishes or fine cheeses.

Brigaldara

With its characteristic 16th century villa surrounded by magnificent vineyards, the Brigaldara winery in San Floriano, owned by the Cesari family since 1928, dominates the Vallata di Marano, one of the four valleys of the historic Valpolicella area. The secret of these Veneto wine producers lies in the winemaking process, a crucial element of the Brigaldara identity. Supported by significant wine-makers such as Roberto Ferrarini, one of the most important innovators in the history of Amarone, the members of the Cesari family have in fact adopted important innovations for their production facilities and the cellar. Lamberto and Antonio, the current owners, encourage a specialised layout of the vineyards with constant love and passion, based on the varieties best suited to each area of their 120 hectares.
