Cantina Terlano’s Sauvignon Quarz is a white wine of rare nobility, whose name pays homage to the quartz crystals found in Terlano’s volcanic porphyry, a soil that gives this wine an unmistakable mineral character. Production is the result of a rigorous selection of the most suitable plots, with a vinification process involving ageing for around nine months: part of the wine matures in large wooden barrels to develop structure, whilst the other rests in steel to preserve its aromatic integrity, followed by a blending process that enhances its harmony. In the glass, it presents a brilliant straw-yellow colour, enlivened by greenish highlights. The nose is a complex and seductive mosaic, where classic notes of elderflower and gooseberry blend with exotic hints of mango and papaya, finished with a touch of wild mint and a distinct chalky undertone. On the palate, Quarz impresses with its depth: it is a vibrant wine, endowed with a sharp freshness and an almost salty savouriness that makes it go down a treat, culminating in a very long and elegant finish.
This multifaceted structure makes it ideal for gourmet pairings. It excels alongside complex seafood dishes, such as a shellfish soup or salt-baked sea bass, yet holds its own against bolder flavours such as white asparagus from Terlano with Bolzano-style sauce or delicate white meats. It is a Sauvignon of extreme elegance, capable of standing the test of time and evolving magnificently in the bottle.
To fully appreciate its style, this wine should be served at a serving temperature of 10/12°C.
