The Brut Athesis by Kettemeir is a blend based on Chardonnay, combined with at least one third Pinot Bianco and a touch of Pinot Noir to enhance its softness. The three varieties are vinified separately and aged, all in stainless steel, until spring. At that point, it is bottled with the addition of liqueur de tirage, after which the wine rests on the lees for at least two years.
The straw-yellow color that fills the glass becomes brilliant thanks to the play of bubbles, creating a fine and persistent perlage. The nose is very pleasant, balanced between fresh and fruity notes of apple, pear, and plum, along with the typical yeasty aromas of the classic method. The same delightful qualities are found on the palate, where the taste is deeply fresh and vibrant, supported by aromas of dried fruit. The finish is excellently persistent.
A pleasant bottle that can serve as a classic aperitif among friends, or pair well with dishes featuring fish and shellfish.
To fully appreciate its style, this wine should be served at a temperature of 8/10°C.
