TASTING NOTES

In 1891, Giulio Cocchi, a brilliant young pastry chef from Florence, laid the foundation for his business after moving to Asti. Fascinated by Piedmont's tradition of aromatic wines, he initially created his own recipes for Vermouth and Barolo Chinato. When the Bava family took over the company in 1978, this marked the beginning of the addition of Metodo Classico and Asti Spumante to Cocchi's branded product range. Totocorde is the flagship label of the company's Alta Langa product line. This Piedmontese Metodo Classico is produced from a cuvée of 80% Pinot Noir with 20% Chardonnay; these percentages give this wine a surprising full flavour and complexity, not to mention excellent drinkability. After gentle pressing of the grapes and vinification of the musts, the cuvée rests on the lees for more than four years. A small addition of liqueur helps to create the overall balance. In the glass, Totocorde is straw yellow in colour and illuminated by a fine, dense perlage. On the nose, fruit and white flowers rest on a carpet of delicate notes of butter and freshly baked puff pastry. Full flavour and freshness invigorate the palate making it dynamic and luscious.
