Production

This Piedmontese Metodo Classico is created from a cuvée of 80% Pinot Noir and 20% Chardonnay; these proportions ensure surprising sapidity and complexity, along with excellent drinkability. After a gentle pressing of the grapes and vinification of the musts, the cuvée rests on the lees for over 4 years. A small addition of liqueur contributes to the overall balance.

Organoleptic Characteristics

In the glass, Totocorde shows a straw-yellow color illuminated by a fine and dense perlage. On the nose, white fruit and flowers rest on a bed of delicate notes of butter and freshly baked puff pastry. The sapidity and freshness enliven the sip, making it dynamic and flavorful.

Occasion and Pairing

Ideal as an aperitif wine, it pairs perfectly with cured meats and cheeses, as well as canapés and seafood finger foods.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 8/10°C.
