TASTING NOTES

Production

The grapes, harvested in crates of approximately 20kg, are poured directly into the press for a gentle, delicate pressing. The resulting must is transferred to temperature-controlled tanks for static settling, then fermented in stainless steel tanks at low temperature. Once fermentation is complete, the wine is kept in contact with the fine lees for a few months. At this stage, the cuvée is created by blending wines from the various selected crus. In spring, the wine undergoes a second fermentation, this time in the bottle, followed by a maturation process on the lees, in the cool, dark and protected environment of the cellars, in accordance with the strictest rules of the Metodo Classico sparkling wine.

Organoleptic Characteristics

The cuvée is created through a skilful blend to produce a fresh, fruity wine. The ageing period, which is never less than 30 months, imparts the right aromatic complexity. The colour is straw yellow with greenish hues. The aroma evokes honey, white-fleshed peach, grapefruit and basil. On the palate, the wine is savoury with an enveloping effervescence and a sweet, long finish.

Excellent as an aperitif, but above all, thanks to its undeniable character, it is an excellent choice to accompany every course

Fontanafredda was born in 1858 from the love story between the King of Italy, Vittorio Emanuele II and Rosa Vercellana.
