Cantina Contratto was the first Italian winery to produce a vintage Metodo Classico sparkling wine in the Oltrepò Pavese area, thanks to the vision of Giorgio Rivetti. The underground cellars were dug into the calcareous tuff to a depth of 32 metres, maintaining a constant, natural temperature, ensuring the perfect environment for bottle fermentation and the slow maturation of wines produced using the Metodo Classico. It is not just great reds; now the sparkling wines of Alta Langa are also taking Piedmont to the pinnacle of the global wine world. Contratto’s Extra Brut Special Cuvée is crafted from the finest Pinot Noir grapes, with a small percentage of Chardonnay, and rests on its lees for a full 72 months following the second fermentation in the bottle. It is a sparkling wine made special by its surprising mineral character and the endless persistence of its aromas and bubbles, distinguished by its personality and tenacity, as evoked by its label, which echoes those once used for marketing. In the glass, it is a golden straw yellow, with a fine and very persistent perlage. On the nose, it enchants with the harmony of its floral and citrus aromas, hints of aromatic herbs and a pleasant note reminiscent of dried fruit. On the palate, it is highly complex, with a powerful, mineral-driven freshness that balances the sweet, pastry-like notes and a delicately creamy effervescence.
Perfect throughout the meal to accompany fish dishes or delicate white meats.
