Vodopivec's Venezia Giulia Vitovska “MM16 only” is made from pure Vitovska grapes from a specific selection of old Karst vineyards, characterised by extremely low yields and great aromatic concentration. The wine is the result of low-intervention artisanal winemaking: spontaneous fermentation with indigenous yeasts and long maceration on the skins, conducted according to the producer's tradition. The refinement takes place in large wooden containers and/or amphorae, followed by a long rest in the bottle, without filtration or clarification, to express to the maximum the purity and identity of the cru.
Deep golden yellow color with bright amber reflections. On the nose it is deep, layered and very expressive, with notes of ripe fruit, candied citrus, aromatic herbs, dried flowers, honey and a strong mineral and brackish imprint typical of the Karst. On the palate it is structured, vibrant and material, with a fine but present tannic texture, great tension and marked flavour. The finish is long, persistent and very consistent, with citrus and mineral returns.
Wine of great character and complexity, designed for in-depth tastings and high-end cuisine. It pairs perfectly with textured seafood dishes, shellfish, baked or grilled fish, elaborate white meats, rich vegetarian dishes, and aged cheeses.
To fully appreciate its style, this wine should be served at a serving temperature of 10/12°C.
