Vodopivec's Venezia Giulia Vitovska “MM14 only” is made from pure Vitovska grapes from a selection of old Karst vineyards, grown on extremely poor calcareous karst soils, which give the wine a strong mineral identity. Winemaking follows an artisanal and natural approach: spontaneous fermentation with indigenous yeasts and long maceration on the skins, aimed at extracting aromatic structure and complexity. Refinement takes place in large wooden barrels and/or amphorae, followed by a long rest in the bottle, without filtration or clarification, to preserve integrity and territorial expressiveness.
Deep golden yellow color with bright amber reflections. On the nose it is broad and layered, with notes of ripe fruit, candied citrus, aromatic herbs, dried flowers, honey and a strong mineral and saline component typical of the Karst. On the palate it is structured, tense and material, with fine but present tannin, great flavour and a vibrant freshness. The finish is long, dry and persistent, with citrus returns and a clear mineral imprint.
Wine of great character and complexity, ideal for in-depth tastings and sought-after cuisine. It pairs perfectly with textured seafood dishes, shellfish, baked or grilled fish, elaborate white meats, complex vegetarian dishes, and aged cheeses.
To fully appreciate its style, this wine should be served at a serving temperature of 10/12°C.
