Venezia Giulia Vitovska “Origine” from Vodopivec is made from pure Vitovska grapes from old Karst vineyards, grown on rocky soils poor in organic matter, characterised by a strong presence of limestone. The production philosophy is extremely natural and non-interventionist: spontaneous fermentation with indigenous yeasts and long maceration on the skins, which can last for several weeks. Aging takes place in large wooden containers and then in bottles, without filtration or clarification, to fully preserve the identity of the grape variety and the territory.
Intense golden yellow color with amber reflections, typical of macerated wines. On the nose it is deep and complex, with notes of ripe fruit, candied citrus, medicinal herbs, dried flowers, honey and marked mineral and saline sensations. On the palate it is structured, tense and material, with an evident but fine tannic component, great freshness and a marked flavour. The finish is long, dry and persistent, with mineral and slightly spicy returns.
Wine with strong personality and territorial identity, ideal for conscious tastings and sought-after cuisine. It pairs perfectly with savory seafood dishes, shellfish, baked or grilled fish, textured white meats, complex vegetarian dishes, and aged cheeses.
To fully appreciate its style, this wine should be served at a serving temperature of 10/12°C.
