Venezia Giulia Vitovska from Vodopivec is made from pure Vitovska grapes from old vineyards grown in the Karst, on poor soils rich in red limestone. The production philosophy is artisanal and respectful of nature: fermentations occur spontaneously with indigenous yeasts and winemaking is carried out with long maceration on the skins. Aging takes place in wooden barrels and/or amphorae, without invasive procedures, with a long rest before bottling, to enhance the depth and territorial identity of the grape variety.
Deep golden yellow color with amber highlights, typical of prolonged macerations. On the nose it is complex and territorial, with notes of aromatic herbs, dried flowers, ripe citrus fruits, yellow-fleshed fruit, honey and light saline and mineral nuances. On the palate it is structured, tense and vibrant, with great saltiness and a fine but perceptible tannic texture; the finish is long, dry and deeply mineral.
Wine of great personality, ideal for careful tastings and sought-after gastronomic pairings. It pairs well with textured seafood dishes, shellfish, baked fish, savory vegetarian cuisine, white meats, and aged cheeses.
To fully appreciate its style, this wine should be served at a serving temperature of 10/12°C.
