Livio Felluga is one of the leading figures in Friulian viticulture, employing cutting-edge winemaking techniques designed to showcase the border region. The essence of Sharis, expressed through traditional varieties such as Ribolla Gialla and Sauvignon, and international varieties such as Chardonnay, embodies the beauty of Friuli Venezia Giulia in all its diversity. Gently destemmed, the grapes are softly pressed and the resulting must is clarified through decanting. This is followed by temperature-controlled fermentation in stainless steel tanks. At the end of fermentation, the wine is left on the lees for several months to enhance its flavour, creaminess and ageing potential. Straw-yellow in colour with greenish highlights, the nose is of good intensity, floral and fruity. Aromas of white flowers with hints of jasmine, lily of the valley, vanilla and orange blossom interact with notes of pear and pineapple, giving way to kumquat, lime and bergamot, and finishing with a delicate balsamic note. Lively, savoury and mineral on the palate. Fresh and with good length, it alternates fruity aromas of Golden Delicious apple and Williams pear with citrus and balsamic notes. A long, spicy finish.
Excellent as an aperitif, it pairs beautifully with asparagus, vegetable soups, puréed pulses and marinated fish.
To fully appreciate its style, this wine should be served at a temperature of 12–14°C.
